Chocolate Toffee Ice Cream Sauce

You heard that right: this Chocolate Toffee Ice Cream Sauce is the best ice cream topping you could have ever imagined. Decadent and velvety, ready in five minutes. Is there anything more perfect?

Growing up in Italy, I have never had the habit of topping ice cream with a chocolate sauce, or a strawberry sauce. We just don't do it, and I really did not see the point in them. That's what I thought, until I moved to England and my boyfriend's mum made me try her Chocolate Toffee Ice Cream Sauce. And oh boy, was I wrong! It was the best ice cream topping ever! So decadent and delicious, I just could not believe how good it was. So, of course, I had to ask for the recipe. And here it is in all its glory.


What I like about this ice cream sauce is that it's ready in five minutes and only requires pantry and fridge staples that are quite common (at least in my household). And as much as I have come to like store-bought ice cream sauces, this is just on another level. In fact, I'll just go all out and say that this is the best ice cream sauce ever. And it doesn't have to go only on ice cream. It's perfect on freshly whipped cream, fresh fruit like strawberries and raspberries, and pretty much every pudding. A super versatile sauce.

What You Will Need to Make This Chocolate Toffee Ice Cream Sauce:

  • Butter: the base for this recipe is butter, which gives this sauce it's lush and creamy consistency. If you don't use dairy butter, feel free to substitute it for margarine or vegan butter.

  • Golden Syrup: also called (by me) liquid gold, this is the "toffee" part, the binder that makes the sauce sticky and delicately harden on top of a cold, ice cream scoop.

  • Dark Cocoa Powder: the better the quality of your cocoa, the richer the flavour. It makes your sauce goes dark and chocolaty.

  • Icing Sugar: as well as providing an extra touch of sweetener, just like the golden syrup, icing sugar helps with the overall consistency of the sauce. I don't have a massive sweet tooth, and yet I wouldn't leave this out. If you didn't want to add more sugar though, you could substitute it for 1/2 tsp cornflour or cornstarch.

Key Steps to Make the Perfect Ice Cream Sauce:

  • Step 1: Gently melt your butter in a small non-stick pan on a low heat.

  • Step 2: Add the golden syrup, mix well and gently cook for about a minute, constantly stirring.

  • Step 3: Add the dark cocoa powder and icing sugar, mix well and, as the sauce starts to thicken, remove from the heat.

And that's it! Could it be any easier?

Ingredients:

28 gr (1 oz) unsalted butter (can be substitute for vegan butter or margarine)

3 tbsp golden syrup

1 tsp dark cocoa powder

1 tsp icing sugar (see notes above for substitutions)


Method:

  1. To a small pot or non-stick pan, add the butter and gently melt on a low heat.

  2. Add the golden syrup and mix well until combined. Cook on low for just under a minute, stirring continuously.

  3. Add the dark cocoa powder and icing sugar. Mix well and cook for another few seconds, or until the sauce has slightly thickened.

  4. Remove from the heat and wait a couple of minutes before pouring over ice cream, fresh fruit or your favourite pudding.
