Banana Bread Granola

Yes! You heard that right! Now you can have lockdown's iconic bake in cereal form! Breakfast has just gotten a whole lot better.

If there is something that really excites me, that's finding new breakfast ideas. Breakfast is my absolute favourite meal of the day, and I can't stand it when it gets all samey. For this reason, I am always on the hunt for new recipes, be it granola, breakfast burritos, smoothies, you name it! And it was by experimenting with new cereal and granolas that this banana bread granola game about.


After seeing all those pancake cereal and cookie cereal on social media, I started thinking about my love for cake for breakfast, and wondered whether I could mix the two. I had many ideas at first, like brownie cereal. But then, I decided that actually, I could just make a granola that resembled, both in texture and favour, one of my all-time favourites: banana bread. And so I did.


So mashed two overripe bananas, added oats, maple syrup, cinnamon, peanut butter and pecans (though you could also use walnuts and/or adding chocolate chips at the end) and baked it all off for about 25 minutes. And what I got was a soft, doughy granola, which tasted exactly like a banana loaf. The best way to have cake for breakfast.

What to Expect When Making This Banana Bread Granola:

  1. The Smoothest Texture: unlike normal granola, which is fragrant and crunchy, this granola truly mimics the texture of banana bread giving you a soft, cakey and slightly chewy consistency.

  2. The Best Banana Bread Flavour: when I say that this granola tastes like banana bread, I mean it. Following a similar approach to when I make my banana bread, starting by mashing overripe bananas and adding similar tasting ingredients to what normally goes into a banana loaf, your kitchen will smell AMAZING!

  3. A Filling Breakfast: combining oats, bananas, peanut butter and chopped nuts, this is a nutrient-dense, refined-sugar free vegan breakfast that will keep you satisfyied and energised throughout the day.

  4. A Great Meal-Prep Breakfast Option: because this granola starts with a very wet dough and because of the bananas, this granola lasts way less than other types of granolas or cereal. However, it will last a good five days, meaning that you can have it every single day of your week. And the best part? You can mix it up by serving it over yogurt or milk, topping it with extra bananas, chopped nuts, peanut butter (or nut butter of choice) and chocolate chips. Sign me up!

Ingredients:

2 overripe bananas

3 cups (270 gr) rolled oats

10-12 pecan nuts (or walnuts)

4 tbsp maple syrup

2 tbsp vegetable oil

2 tbsp peanut butter (or nut or seed butter of choice)

1 tsp cinnamon

1 tsp vanilla extract


Method:

  1. Preheat the oven to 160°C.

  2. In a large bowl, mash the bananas with a fork until smooth.

  3. To the same bowl, add the rolled oats, maple syrup, vegetable oil, peanut butter, chopped pecan nuts, cinnamon and vanilla extract and mix until you have a dense, sticky dough.

  4. Transfer to a baking tray lined with baking paper, spread it and press it with a spoon like you would a cheesecake base.

  5. Bake in the oven for 20-25 minutes, or until golden.

  6. Take out of the oven and let cool down completely. Then gently break it off with your hands or a spoon creating some large clusters (because of the nature of this grabola, they will look a bit cakey and not like your usual granola clusters).

  7. Store in an airtight container both on the counter or in the fridge for up to 5 days.

Serve over yogurt or milk and top with extra banana, chocolate chips, nuts and/or your favourite nut butter.
